Amish Baked Oatmeal

I found this recipe in a Taste of Home magazine. This tasted like an oatmeal cookie.

Ingredients:


  • 1 1/2 cups quick-cooking oatmeal
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup melted butter or 1/4 cup margarine
  • 1 egg
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350 degrees.
  2. Grease a 13 x 9 x 2 baking pan.
  3. Combine all ingredients together.
  4. Spread on prepared baking pan.
  5. Bake for 25-30 minutes or until the edges are golden brown.
  6. Immediately spoon into a bowl.
  7. Top with warm milk, fresh fruit or brown sugar if desired.
