Key Lime Cheesecake

I made this yesterday for a party and it was a hit. The only thing I did differently is put about 1 inch of boiling water into an oven tray and then put a round cookie tray cooling rack in the water. I then put the cheesecake on the tray so it wasn't actually sitting in the water but just above the water. This way it still got the moisture without having to risk the crust getting wet. To be extra sure, I still put aluminum foil around the bottom. It came out beautifully.

Ingredients:
  •     1¾ cups vanilla wafer or graham cracker crumbs
  •     5 tablespoons butter, melted
  •     3 (8 ounce) packages cream cheese, completely softened
  •     1 cup sugar
  •     1 teaspoon vanilla extract
  •     6 tablespoons key lime juice
  •     3 eggs
  •     2 tablespoons sour cream
