Wilmington Island Marsh Mud Cake




"This cake is as much fun to make as it is to eat."


Make 16 to 20 servings.

Ingredients
:

Cake:
  • 1/2 cup cocoa
  • 1 cup (2 sticks) butter, melted 
  • 4 eggs beaten 
  • 1 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/8 teaspoon salt 
  • 1 teaspoon pure vanilla extract 
  • 1 1/2 cups chopped pecans
Frosting:
  • 1 16-ounce box light brown sugar
  • 1/3 cup cocoa
  • 1/4 cup (1/2 stick) butter, softened
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract 
  • 1 10.5-ounce package miniature marshmallows

Directions :
  1. Preheat oven to 350 degrees. 
  2. Grease a 13x9x2-inch pan. 
  3. Stir cocoa into mixing bowl with butter. 
  4. Add eggs, flour, sugar, salt and vanilla. 
  5. Beat well with a mixer. 
  6. Fold in nuts. 
  7. Pour into prepared pan and bake for 35 minutes.
  8. While cake is baking, prepare frosting. 
  9. Scald the milk. 
  10. Beat the brown sugar and butter together. 
  11. Add cocoa, milk and vanilla and beat until smooth. 
  12. Remove cake from oven when done and pour marshmallows over hot cake. 
  13. Pour frosting over marshmallows on top.
