Best Ever Banana Cake with Cream Cheese Frosting

 
Great dessert ever. I served this to family and it was a hit.

Ingredients :
  • 2 cups bananas , mashed
  • 2 teaspoons lemon juice
  • 3 cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • ¼ teaspoon salt
  • 1/4 tsp of nutmeg
  • ¾ cup unsalted butter , room temperature
  • 2 1⁄8; cups sugar
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla
  • 1 ½ cups buttermilk, room temperature
  • Cream Cheese Frosting
  • 1 stick unsalted butter, room temperature
  • 8 oz or 1 package of cream cheese softened
  • 1 teaspoon vanilla
  • 31/2 cups of powdered sugar
Cream Cheese Frosting
  • 1 stick unsalted butter, room temperature
  • 8 oz or 1 package of  cream cheese softened
  • 1 teaspoon vanilla
  • 31/2 cups of powdered sugar

DIrections :
  1. In a small bowl, mix mashed banana with the lemon juice; set aside.  In a medium bowl, mix flour, baking soda , nutmeg and salt; set aside.
  2. In a large bowl, cream butter and sugar until light and fluffy.  Beat in eggs, one at a time, then add in 2 tsp vanilla.
  3. On low, add the flour mixture alternately with the buttermilk.  Stir in banana mixture.
  4. Pour batter into prepared pans and bake in preheated oven for one hour and 15 minutes or until toothpick inserted in center comes out clean. 
  5. Unmold on to wire racks and cool completely if using 9 inch round, otherwise leave in pan to cool.
  6. For the frosting, cream the butter and cream cheese until smooth.  Beat in the vanilla. 
  7. Add powdered sugar and beat on low-speed just until combined. Don’t
  8. over beat. 
  9. Sprinkle chopped nuts over top of the frosting.
